Change MySQL character set in VMware appliance

I want to send me **_written instructions_** about changing the character set in MySQL from **_latin1_** to **_UTF8_** and collation to **_utf8_general_ci_** of the application databases for the following VMware appliances. 1. Each set should inlclude instructions for changing the character set for a. Server b. Application Database c.
