Create script to export products from e-commerce site database

We're looking for a developer (preferably PHP) who can create a script to export e-commerce category and product data from a bespoke built e-commerce platform.
We have inherited several websites running on this platform and want to have a reliable, re-usable export script which will gather the category, product, pricing, image file names, meta tags, etc. and export this to a CSV file with columns set up as per a template CSV that we will create. This will be done on a per site basis as we move each of the sites onto a more modern e-commerce CMS.
The databases are MySQL and are currently running on a Tomcat Windows server.
Included in the deliverables are:
1. Evaluate the database and confirm the fields to be exported from our template CSV
2. Create the script and run it on one of the sites
3. Create brief documentation for re-use of the script
