I've done some similar projects in past for nutritional boxes sent every month to the users (with stripe) in Wordpress / Woocommerce. So this would be a good idea so you can manage the orders, cancel, etc. Subscription can be taken on the subscription renewal day according to stripe api subscription mode, and be canceled anytime by you or the user.
