need some cross section imagery done in AI file

Freelancer will need to provide AI file to contain different layer options which i can select (details below has reference to attached image).

Currently above image shows Metal Layer, Coating Layer 1, Coating Layer 2, Coating Layer 3. i would like also Coating layer 4, coating layer 5 and also another coating layer below the metal layer.

for EVERY coating layer, i should be able to:

1) add smallest particles like Layer 3 of Picture 2

2) add particles like layer 2 of Picture 2

3) add particles like layer 1 of Picture 2

4) add particles like that in layer 2 of Picture 3

will i be able to change the colour of each layer and particle easily myself?
